There are 23 places selling empanadas at Mercado del Río. We ate at all 23. Some of these were difficult.
Findings: the winner is not what you'd expect, and the cheapest one (1,800 COP each) is in our top three. The most expensive (8,500 COP each, "deconstructed") was the worst. Two stalls we'd send a tourist to. Two we'd send a tourist away from.
Full ranked list coming next week — with stall numbers, hours, and the empanada-to-aji ratio at each one. Hint for now: go hungry, go early Saturday, ignore the lines (they're for the wrong stalls anyway).
